Serves: 8-10
Prep time: 25 minutes
Bake time: 1 hour
Ingredients
Cake:
2/3 cup white chocolate chips
1-1/4 cups evaporated milk
1 cup butter, room temp
1-2/3 cups granulated sugar
5 large eggs, room temp
2-3/4 cups all purpose flour
1/2 teaspoon baking soda
1 1/2 teaspoon salt
1 teaspoon vanilla extract
White Chocolate Icing:
1/3 cup butter
1/2 cup white chocolate chips
2 cups powdered sugar
4 tablespoons milk or half & half cream
1/4 teaspoon vanilla extract
Directions:
Melt the white chocolate chips and evaporated milk together in a saucepan over medium low heat for 4 minutes. Then, set it aside for 5 minutes to cool.
Add the butter and sugar into a bowl and whisk for 3 minutes.
Add in the eggs one at a time and whisk each one. Then, add in the vanilla extract and whisk until everything is combined.
Whisk all the dry ingredients - flour, baking soda and salt - together in a separate bowl for 30 seconds.
Alternate between adding the dry ingredients and melted chocolate mixture, whisking after each addition until everything is combined.
Tip: Start with the dry ingredients and end with the dry ingredients.
Pour the batter into a 12 cup bundt cake pan that is well greased.
Preheat the oven to 325F and bake for 1 hour. Then, invert the cake and let it cool to room temperature.
To make the icing, melt the butter and white chocolate chips together in a saucepan on low heat. Then, turn off the stove and add in the vanilla extract, powdered sugar and milk. Stir until everything is combined.
Evenly spread the white chocolate icing onto the cooled cake.
