White Chocolate Cranberry Almond Fudge

Ingredients

2 bags white chocolate chips (2 x 200g)

1 can of sweetened condensed milk (300ml)

2 tablespoons salted butter

1 cup dried cranberries

1/2 cup of toasted almonds, chopped into large pieces


Directions:

  1. Toast the almonds in a frying pan over medium low heat for 5 minutes, stirring occasionally. Remove from heat and allow the almonds to cool before chopping them into large pieces.

  2. In a medium saucepan over low-medium heat, add in the white chocolate chips, butter and sweetened condensed milk. Continuously stir until the mixture is fully melted and smooth.

  3. Remove the saucepan from the heat and stir in the almond extract, toasted almonds and dried cranberries. Mix until everything is combined.

  4. Pour the fudge mixture in a 8x8 baking dish that is lined with parchment and lightly greased. Spread the mixture evenly and work quickly to prevent it from hardening.

  5. Optional! Sprinkle additional dried cranberries on top and gently press them into the fudge.

  6. Place the baking dish in the refrigerator and let the fudge set for a minimum of 4 hours.
