Ingredients


• 3 large egg yolks

• 1 tablespoon cornstarch

• 1 cup heavy cream

• 3 tablespoons granulated sugar

• 1-1/4 teaspoons pure vanilla extract

• 1/8 teaspoon salt


Directions:


  1. Mix the egg yolks and cornstarch in a bowl until smooth.


  2. In a small saucepan, bring the water to a simmer. In a heat proof bowl, combine the heavy cream, sugar and salt. Place the bowl over the simmering water, ensuring the bottom does not touch the water. Stir continuesly until the mixture begins to simmer.


  3. Remove from heat and slowly pour small amounts of the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.


  4. Return the tempered egg mixture to the pot of simmering water. Stir continuously until the mixture thickens. Do not let it boil.


  5. Once thickened, remove from the heat and pour into a bowl. Let it cool slightly. It is now ready to use on ice cream, fresh fruit , cake, yogurt & more!


Tips:


• May substitute heavy cream for milk- for a thinner consistency

• May substitute heavy cream for half & half cream - for a slightly thinner consistency
