Almond Crunch Cookies

Ingredients


  • 1/2 cup granulated sugar

  • 1/2 powdered sugar

  • 1/2 cup unsalted butter, at room temperature

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 teaspoon almond extract

  • 1 teaspoon vanilla extract

  • 1-3/4 cups all-purpose flour

  • 1/2 cup almond flour

  • 1 teaspoon baking soda

  • 1 teaspoon white distilled vinegar

  • 1/2 teaspoon salt

  • 1-1/4 cups coarsely chopped almonds or almond slices

  • 1 package of white chocolate chips (226g)


Directions:


  1. ​Preheat oven to 350F. Into a bowl, add in the sugar, powdered sugar, vegetable oil and your butter. Mix the ingredients for 3 to 4 minutes, until a creamy batter forms.

  2. Add in the eggs, vanilla extract and almond extract. Mix all the ingredients until combined.

  3. Add in the vinegar and mix again.

  4. Add in the baking soda, salt, almond flour and flour. Mix until combined.

  5. Fold in the chopped almonds and white chocolate chips, with a spatula. If the dough is too soft to handle, wrap it in plastic wrap and place it in the fridge for 30 minutes.

  6. Prepare some cookie sheets lined with parchment paper.

  7. Bake for 12 minutes or until the edges of the cookies are a light golden brown.
