Ingredients
2-1/2 cups milk
3/4 cup granulated sugar
1/4 teaspoon salt
3 tablespoons cornstarch
2 large eggs
1/2 cup freshly squeezed lemon juice
zest of 2 lemons (plus, more for garnish)
1 teaspoon vanilla extract
25 drops yellow food coloring (optional)
Whipped Topping
1/2 cup heavy whipping cream
2 tablespoons powdered sugar
Directions:
In a medium saucepan, add your milk, sugar, cornstarch, salt & eggs. Whisk until well combined. Then, place your stovetop over medium heat and occasionally stir your mixture until it thickens.
Once your mixture has thickened, turn off your stovetop and add the lemon juice, lemon zest, vanilla extract and food coloring. Mix until well combined.
Run your mixture through a sieve, to ensure that your pudding is smooth.
You are now ready to place your pudding into serving dishes. Refrigerate your pudding for 2 - 3 hours before serving.
For the whipped cream, whisk your heavy cream and powdered sugar in a bowl, until they develop firm peaks.
I like serving my pudding with fresh whipped cream and some freshly grated lemon zest.
