Ingredients
4 cups mashed potatoes (1-2 days old)
2 - 1/4 cups shredded mozzarella cheese
1 large egg + 1 egg yolk
1 cup all-purpose flour
2 tablespoons of chopped scallions
2 tablespoons chopped parsley
2/3 cup Italian bread crumbs
2 - 3 tablespoons olive oil, for frying
2 - 3 tablespoons vegetable oil, for frying
Directions:
Into a bowl, add the mashed potatoes, eggs, shredded mozzarella cheese, chopped parsley and the scallions. Mix with a spatula until combined. Add in the flour and mix again. If your mixture is too soft to handle, add in some more flour, a couple tablespoons at a time.
Use an ice cream scoop to scoop out your mixture and shape the patties with your hands. Spray your hands with some non-stick spray. Coat each side of the patty in the bread crumbs, shaking off the excess. Then place your prepared patties on a baking sheet lined with parchment paper.
Place your frying pan over medium heat. Add the olive oil and vegetable oil. Allow your pan to come to temperature. Fry the potato patties for 3-4 minutes on each side, until the patties become golden brown.
I enjoy serving my potato patties with garlic aioli sauce.
