Serves: 8 to 10

Ingredients


  • 2 cups all purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1-2/3 cups granulated sugar

  • 5 egg yolks

  • 1 cup water

  • 2/3 cup vegetable oil

  • 8 egg whites

  • 1 tablespoon vanilla extract

  • 1 teaspoon white distilled vinegar

  • 1 box instant vanilla pudding (102g)


Chocolate Sauce:

  • 1-1/3 cups semisweet chocolate chips

  • 1 tablespoon corn syrup

  • 1/2 cup cubed butter


Directions:

  1. Into a large bowl, add the egg whites, vanilla and vinegar. Whisk until medium firm peaks.


  2. In a separate bowl, add in the egg yolks, sugar and vegetable oil. Whisk for two minutes and then add in the water.

  3. In a separate bowl, add the flour, baking powder, salt, and the instant vanilla pudding mix. Whisk until combined.

  4. Split the dry ingredients in half and add them into the batter in two parts. Fold the dry ingredients into the egg yolk mixture with a spatula, until the batter is smooth.


  5. In two parts, fold the egg white mixture into the egg yolk mixture, using a spatula.

  6. ​Preheat oven to 350F. Prepare a 9x13 baking pan that has been lined with parchment paper. Do not grease the pan.

  7. Bake your cake for 60 minutes.


  8. Allow the cake to cool completely in the pan.

  9. Now its time to make the chocolate glaze. Chocolate Glaze:  On your stovetop over medium heat, add the butter, semi sweet chocolate chips and corn syrup. Stir until everything is melted together. Allow your glaze to come to room temperature.

  10. Spread the chocolate glaze over the entire cake or spread over individual slices.
