Mini Chocolate Tarts

Ingredients


  • 1-1/3 cups heavy whipping cream

  • 1-3/4 cups semi-sweet chocolate chips

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 36 frozen mini tarts (thawed)


Topping:

  • 1/2 cup heavy whipping cream

  • 2 tablespoons powdered sugar


Directions:


  1. Preheat oven to 375F.

  2. Prepare a cookie sheet lined with parchment paper. Place the thawed mini tarts on the cookie sheet and set aside.

  3. In a microwave safe bowl or mug, add in the heavy cream and warm it up for 1 minute and 30 seconds or until it bubbles around the edges.

  4. Into a bowl, add the semi sweet chocolate chips and pour the warm heavy cream on top. Allow the bowl to sit for 5 minutes and then whisk until you have a smooth chocolate mixture.

  5. Add the eggs and vanilla extract, into the chocolate mixture and mix until well combined.

  6. Place the chocolate filling into a pipping bag and fill the mini tarts.

  7. ​Bake your chocolate tarts for 14 minutes. The edges of your tarts should be light golden brown.

  8. For the whipped topping, into a bowl, add the heavy cream and powdered sugar. Whisk until firm peaks. With a pipping bag, swirl the whipped cream on top of each tart. Keep Refrigerated.
