Serves: 6 to 8

Ingredients
1 box yellow or golden cake mix
1 teaspoon cinnamon
4 medium ripe bananas (mashed)
1 cup milk
4 large eggs
1 box of instant vanilla pudding (102g)
1/3 cup unsalted butter, melted
Optional Toppings:
Walnuts
Chocolate Chips
Pecans
Directions:
Preheat oven to 350F.
Mash four ripe bananas and place them into a bowl. Add in the eggs, and mix until combined.
Add the melted butter and whisk.
Add in the milk and whisk again.
Add in the instant vanilla pudding mix and cinnamon, and mix until combined.
Add in the boxed golden cake mix and whisk until the batter is smooth. Don't overmix. At this time, you may optionally add walnuts, pecans or chocolate chips.
Grease your loaf pan with butter or non-stick spray and line it with parchment paper.
Bake for 60 minutes or when a toothpick inserted into the center comes out clean.
Allow your banana cake to cool in the pan for about one hour. Then invert your cake onto a platter and you are ready to serve!
