Cranberry Loaf
1 - 2/3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
zest and juice of 1 large orange (about 1/3 cup juice)
1/3 cup unsalted butter at room temperature
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 - 1/2 cups fresh cranberries (if you use frozen, make sure you defrost them and pat them dry)
1/2 tablespoon all-purpose flour (for cranberries)
Frosting
1 - 1/4 cups powdered sugar
2 - 3 tablespoons orange juice (freshly squeezed)
1/4 teaspoon vanilla extract
Directions:
Preheat oven to 350F. Prepare a 9x5 loaf pan that is well greased and lined with parchment paper.
Into a bowl, add the flour, baking powder and salt. Whisk these ingredients together and set them aside.
In a separate bowl, add the sugar and butter. Whisk both ingredients for 4 minutes, until you have a creamy consistency. Then, add in the eggs. Whisk until well combined, and set aside.
In a separate bowl, add the milk, vanilla extract and the zest and juice of an orange. Mix your ingredients until well combined.
Alternate between incorporating the dry ingredients and the milk mixture, into the wet ingredients. Starting and ending with the dry ingredients. Mix until everything is combined together.
Prepare the cranberries by adding 1/2 tablespoon of flour and coating the cranberries completely. This will keep the cranberries from sinking to the bottom of the loaf. Then, fold the cranberries into the batter with a spatula.
Prepare a 9x5 loaf pan that is well greased and lined with parchment paper.
Pour the batter into the prepared loaf pan and evenly spread it. Bake for 55 minutes. Allow the loaf to cool in the pan for 10 minutes and then run a butter knife around the edges to make sure it is loose from the pan. Invert onto a platter.
For the frosting: Into a bowl, add the powdered sugar, freshly squeezed orange juice, and vanilla extract. Whisk until combined. Spread your frosting on top of your cooled loaf. Allow the frosting to set and you're ready to serve!
