Flourless Brownie Cookies

Ingredients


  • 3/4 cup semi-sweet chocolate chips

  • 1/3 cup softened butter

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1/3 cup unsweetened cocoa powder

  • 1/4 teaspoon salt


Directions:


  1. Preheat oven to 350F.

  2. Into a bowl, add softened butter and sugar. Whisk for 2 minutes, until a creamy mixture forms. Add the eggs and mix again. The eggs should not be overmixed.

  3. Microwave the chocolate chips and let them sit at room temperature for 5 minutes. Add the melted chocolate chips into the batter and mix until combined. Add the vanilla extract and mix again.

  4. For the dry ingredients, add unsweetened cocoa powder and salt into the batter and whisk until well combined. The cookie dough should be a thick cake batter consistency. If the dough is too soft, cover it with plastic wrap and put in the refrigerator for 15 to 20 minutes.

  5. Using a small ice cream scoop, place scoopfuls of cookie dough onto a cookie sheet lined with parchment paper.

  6. Bake the cookies for 10 minutes. The outer edges of the cookie should be firm and the middle should be soft. Let the cookies rest on the cookie sheet for 5 minutes, before removing them onto a cooling rack to cool completely.
