Ingredients
1 cup vegetable oil
10 large eggs at room temperature
2 cups all-purpose flour
1 teaspoon salt
zest of 1 lemon
1 - 2 teaspoons vanilla extract
Glaze:
2 cups powdered sugar
4 - 5 tablespoons milk
1 - 2 teaspoons lemon extract
Directions:
In a standing mixer, add eggs, vegetable oil, vanilla extract, salt, flour, and the zest of a whole lemon. Mix ingredients for 20 minutes on medium high speed without stopping. The batter should be thick and pale.
Preheat your oven to 350F and prepare a muffin pan that is well greased with non stick spray.
Using an ice cream scoop, fill the muffin cavities half way.
Bake for 45 minutes. Make sure to keep the oven door closed throughout the entire baking process. Allow them to cool in the pan for 5 minutes before removing them and placing them on a cooling rack.
For the glaze, add powdered sugar into a bowl. Add lemon extract and slowly add in the milk. The glaze consistency, should be between a thin and thick consistency.
Using a tablespoon or pipping bag, drizzle the icing on top of your cavacas. Allow the glaze to set for 30 minutes before serving.
