Serves: 8 to 10

Bake Time: 20 to 25 minutes


Ingredients


  • 1 package of active dry yeast or 2-1/4 teaspoons

  • 3/4 cup buttermilk

  • 1/3 cup water

  • 1 egg + 2 egg yolks

  • 1/4 cup melted unsalted butter + 2 more tablespoons for brushing rolls

  • 1 teaspoon granulated sugar for yeast + 2-1/2 tablespoons for the dough

  • 1 teaspoon salt

  • 3/4 teaspoon baking soda

  • 3 - 1/3 cups bread flour + more for rolling dough


Directions:


  1. Warm the buttermilk and water in the microwave, until they reach 115F - 120F. Add in the yeast and sugar, and allow the yeast to proof.

  2. Into a mixing bowl, add in all of the dry ingredients and mix for about 30 seconds.

  3. Into the flour mixture, add your egg, egg yolks, melted butter and the yeast mixture (make sure it has bloomed). Mix on high speed for about 5 minutes.

  4. Flour your counter lightly and form your dough into a disc shape. Place your dough inside of a greased bowl and cover it with plastic wrap and a clean tea towel. Place in a warm place or in the microwave with the microwave turned off. Allow the dough to double in size.

  5. Sprinkle some flour on your counter and roll out your dough. Form 12 dinner rolls. Place your rolls in a 9x13 inch baking pan and cover them with plastic wrap and a tea towel. Allow them to double in size.

  6. Once your rolls have doubled in size, they are ready to bake. Remove the tea towel and plastic wrap. Preheat your oven to 375F. Bake in the middle rack of your oven for about twenty two minutes, or when they are a nice golden brown.
