Ingredients
2/3 cup unsalted butter, at room temperature
1/3 cup vegetable oil
1/2 cup granulated sugar
1/2 cup powdered sugar
1 large egg
1 teaspoon vanilla extract
1 chai tea bag
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Glaze:
1 - 2/3 cups powdered sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon, and more for dusting
5 - 6 tablespoons of half & half cream or eggnog
Directions:
Preheat oven to 350F. ​Into a bowl, add your butter and mix until creamy. Add in the vegetable oil and whisk until combined. Add in the sugar, powdered sugar, your large egg and vanilla extract. Whisk until combined. Snip off the top of your tea bag and add it directly into the batter. Mix until combined.
Into a separate bowl, add the flour, salt and baking soda. Whisk your dry ingredients together. Pour your dry ingredients into the wet ingredients, in two parts. Mix until a dough forms.
Cover your cookie dough with plastic wrap and place your bowl in the fridge for 30 to 45 minutes, to allow your dough to firm up.
Using an ice cream scoop, place scoopfuls of cookie dough on your cookie sheet, lined with parchment paper. Flatten the tops of each cookie with your fingers, before baking.
Bake your cookies for 12 minutes. Allow them to cool completely before adding the glaze.
For the glaze, in a bowl, add the powdered sugar, cinnamon, nutmeg, and half & half cream. Add your half & half cream, one tablespoon at a time until you reach the desired consistency. Whisk until smooth.
​Spread the glaze on top of the cooled cookies. Sprinkle some cinnamon for added flavor. Allow your glaze to set and enjoy!
