Ingredients
1 pound of fusilli pasta
1 green pepper chopped into cubes
1 red onion chopped into quarter moons
1/3 cup sliced grape tomatoes
1 small package of pepperoni, sliced in half
1 small package of salami, sliced in half
1-1/2 cups cubed mozzarella cheese
Zesty Italian Dressing:
2/3 cup light extra virgin olive oil
Juice of 1 large lemon
1/4 parmesan cheese
2 tablespoons of mayo
1/2 teaspoon granulated sugar
1 teaspoon garlic powder or 2 cloves of grated garlic
1 teaspoon Italian seasoning
1/2 - 1 teaspoon salt (adjust to your liking)
1/2 teaspoon ground black pepper
Directions:
Start by making the zesty Italian dressing! In a jar, add extra virgin olive oil, mayonnaise, juice of a lemon, parmesan cheese, sugar, Italian seasoning, salt, pepper, and garlic powder. Place your dressing in the refrigerator until needed.
In a large pot of water, add 1 to 2 tablespoons of salt and allow the water to come up to a boil. Add your pasta and cook until al-dente. Then, rinse your pasta under cold water, so that your pasta doesn't cook any further.
In a bowl, add the cooked pasta, chopped salami, pepperoni, green peppers, red onion, cubed mozzarella cheese, parsley and grape tomatoes.
Add the homemade zesty dressing and toss the pasta salad, until everything is mixed together. You may refrigerate before serving or enjoy as is.
