Banana Bread Muffins

Ingredients
3/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
2 cups all-purpose flour
1/2 teaspoon salt
1/3 cup vegetable oil
1/3 cup melted butter
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
3 medium ripe bananas, mashed
1 teaspoon vanilla extract
chopped pecans
chopped walnuts
semi-sweet chocolate chips
Directions:
Preheat oven to 350F. Into a bowl, add the sugar, brown sugar, melted butter, vegetable oil and your large egg. Then, mix for two minutes, until the ingredients are light and fluffy.
Add in the baking powder, baking soda, cinnamon, salt, and vanilla extract. Mix until everything is well combined.
Add the mashed bananas into the same bowl. Mix until combined.
Add in the flour and mix again. Ensure not to overmix.
Prepare your muffin pan. You can line your muffin pan with muffin liners or grease your muffin pan with some non-stick spray. Fill each muffin cavity with your muffin batter, and top each one with walnuts, mini chocolate chips or chopped pecans.
Bake for 25 minutes, then allow muffins to cool for 10 minutes before serving.
