Lemon Blueberry Muffins

Ingredients
2 cups biscuit mix (I used Bisquick)
3/4 cup granulated sugar
2 large eggs
Zest of 1 lemon
1 cup sour cream or plain Greek yogurt
3 tablespoons heavy cream
1 cup fresh blueberries
Directions:
Preheat oven to 375F.
In a large bowl combine biscuit mix, sugar, and lemon zest. Whisk until combined.
Add the eggs, heavy cream and Greek yogurt, into your biscuit mixture. Whisk until well combined. Do not overmix.
With a spatula, fold in the blueberries.
Line your muffin cavities and use an ice-cream scoop to fill your muffin liners, 3/4 full.
Bake your muffins for 20 - 25 minutes. Enjoy!
