Yogurt Custard Basque Cake

Serves: 6 to 8

Bake time: 55 - 60 minutes


Ingredients


  • 1-1/2 cups plain Greek yogurt

  • 1/3 cup granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 6 tablespoons cornstarch

  • 1/4 teaspoon salt (optional)


Directions:

  1. Preheat oven to 350F.

  2. Whisk the Greek yogurt, sugar and eggs, until well combined.

  3. Add in the vanilla extract and mix until combined.

  4. Add in the cornstarch and salt. Mix until incorporated.

  5. Place your batter into a greased and lined 11x6 loaf pan.

  6. Bake for about 55 - 60 minutes, or when a toothpick inserted into the center comes out clean.

  7. Leave your cake in the pan, at room temperature for 30 minutes. Then place it in the fridge for at least 2 hours.

  8. You are now ready to invert your cake onto a platter and serve. I like to serve mine with powdered sugar, some maple syrup and fresh blueberries. Enjoy!
