Recipe By: Queen G's Recipes

Serves: 6-8

​Prep time: 15 Minutes

Bake time: 10-14 Minutes


Ingredients


  • 2 cups all purpose flour

  • 2 teaspoons lemon juice, freshly squeezed

  • 2 cups fresh strawberries, diced into small pieces

  • 2 large eggs

  • 1 cup granulated sugar

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, at room temperature 4 oz cream cheese, at room temperature 1 teaspoon vanilla extract

  • 3/4 cup white chocolate chips


Directions:


  1. Dice the strawberries into small pieces and toss them with lemon juice in a bowl.


  2. In a large bowl, beat the butter and cream cheese until smooth and creamy. Then, add in the sugar, vanilla extract and eggs. Mix after each ingredient until all is combined.


  3. In a separate bowl, whisk together all the dry ingredients: flour, baking powder, baking soda and salt.


  4. Gradually add in the dry ingredients into the wet mixture, mixing until all is combined.


  5. Fold in the white chocolate chips, then gently fold in the chopped strawberries using a spatula.


  6. Cover the cookie dough with plastic wrap and refrigerate for 20 minutes.


  7. Line a cookie sheet with parchment paper. Use an ice cream scoop to portion the dough onto the sheet.


  8. Preheat the oven to 350F and bake for 10-14 minutes, or until the edges are golden.


  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
