Red Velvet Bundt Cake!

Bake time: 11 to 12 minutes


Cake Ingredients:


  • 3 large eggs (room temp for 30 minutes)

  • 1-2/3 cups granulated sugar

  • 1 cup vegetable oil

  • 2 teaspoons vanilla extract

  • 1 tablespoon white distilled vinegar

  • 1 teaspoon red food coloring gel

  • 1/4 cup unsweetened cocoa powder

  • 1-2/3 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1 cup buttermilk


Cream Cheese Icing Ingredients:


  • 4oz cream cheese (softened at room temp)

  • 1/4 cup unsalted butter (at room temp)

  • 3/4 cup powdered sugar

  • 1/2 teaspoon vanilla extract

  • A pinch of salt

  • 3–4 tablespoons milk (use as needed for desired pourable consistency)


Instructions:


  1. Preheat oven to 350°F (175°C).


  2. In a large bowl, whisk eggs and sugars for about 2 minutes until slightly pale.


  3. Add in oil and mix until fully combined.


  4. Mix in buttermilk and whisk for another minute.


  5. Add vanilla, vinegar, red food coloring, and buttermilk, mixing until well combined.


  6. Mix in cocoa powder, flour, and salt, then whisk just until combined, do not overmix.


  7. Pour batter into a greased and floured bundt cake pan.


  8. Bake at 350°F for about 50 minutes, or until a toothpick inserted comes out clean.


  9. Let cake cool for 3 minutes before inverting it onto a wire cooling rack.


Cream Cheese Icing:


  1. In a bowl, mix cream cheese, butter, powdered sugar, vanilla extract, and salt with an electric hand mixer.


  2. Gradually add milk (I used 4 tablespoons) until desired pourable consistency is reached.


  3. Drizzle over cooled bundt cake and serve.


Pro Tip: For a smooth icing, make sure your cream cheese and butter are fully softened before mixing.
