Ingredients:
1 bunch fresh parsley
2/3 cup Parmesan cheese
Juice of 2 limes
4 cloves garlic
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon ground black pepper (adjust to taste)
2/3 cup extra virgin olive oil
1/4 cup almonds, toasted
Directions:
In a food processor, combine parsley, lime juice, garlic, salt, black pepper, olive oil, and toasted almonds. Blend until smooth.
Stir in the Parmesan cheese until fully incorporated.
Bring a large pot of water to a boil and heavily salt the water.
Cook the pasta until al dente, then drain.
Toss the hot pasta with the pesto until evenly coated.
Serve immediately or use the pesto as a spread for sandwiches, a dip, or a flavorful topping for roasted vegetables.
Pro Tip: For extra flavor, reserve some pasta water and mix it in with the pesto to create a silkier sauce.
