No Bake Chocolate Mousse Pie

Ingredients

ā€¢ 2 large eggs

ā€¢ Ā½ cup sugar

ā€¢ 2 cups heavy cream

ā€¢ 1 tablespoon Kahlua (optional but amazing) ā˜•ļø

ā€¢ Ā¾ cup semi-sweet chocolate chips

ā€¢ 1 chocolate crumb crust


For the topping:

ā€¢ 1 cup whipped cream

ā€¢ 2 tablespoons powdered sugar

ā€¢ Chocolate shavings

Directions:

  1. In a bowl, add the eggs, sugar, and Kahlua. (The addition of alcohol is optional!) Whisk for one minute until everything is combined and the mixture looks frothy.


  2. In a medium saucepan, add in the heavy cream. Place the saucepan on the stove over medium - low heat for two minutes. Allow the heavy cream to come to a simmer.


  1. Slowly add in the warm heavy cream into the bowl with the egg mixture. Continuously whisk until everything is combined. Then, pour the mixture back into the saucepan.


  1. Place the saucepan on the stove over medium-low heat for seven minutes, whisking continuously. Allow the mixture to thicken in the saucepan.


  1. Remove the saucepan from the stove and add the chocolate chips. Whisk until the chocolate chips are completely melted.


  1. In a bowl, add in the chocolate mixture. Partially cover the bowl with plastic wrap and let the mixture sit for one hour until it reaches room temperature. After one hour, cover the bowl completely and place it in the refrigerator for another hour.


  1. In a mixing bowl, add in the heavy cream and whisk until firm peaks form. Gently fold the whipped heavy cream into the chocolate mixture until well combined.


  1. Pour the filling into a graham cracker pie crust and spread it evenly. Place the pie in the refrigerator for a minimum of four hours.


  1. For the topping, add whipped cream and chocolate shavings.
