Serves: 4-6

Ingredients


  • 1 package of sweet Hawaiian rolls

  • 2 tablespoons melted butter

  • 3/4 cup lemon curd (one box lemon pie filling mix & followed the directions on the box)

  • 2 large egg whites (at room temperature)

  • 3 tablespoons sugar


Directions:

  1. Place the Hawaiian rolls on a cutting board. Use a knife to cut mini holes in the center of each roll.


  2. Brush melted butter inside the rolls.


  3. Separate the rolls and place them on a baking sheet lined with parchment paper. Bake at 350F for 10 minutes.


  4. To make the lemon curd, follow the instructions on the lemon pie filling box. Once it is prepared, cover with plastic wrap and press it directly onto the surface of the lemon curd and refrigerate until it completely cools.


  5. In a bowl, whisk the egg whites and sugar until stiff meringue peaks form.


  6. Allow the rolls to cool to room temperature.


  7. Place the lemon curd in a piping bag and fill each roll about 3/4 full.


  8. Place the meringue in a piping bag and create a swirl pattern on top.


  9. Preheat the oven to 425F and bake for 5 minutes until the meringue becomes toasty and golden.


  10. Let the rolls cool, then garnish with powdered sugar. Enjoy!
