Homemade Raisin Bran Muffins

Serves: 10 - 12

Bake time: 11 to 12 minutes
Ingredients:
2/3 cup Sun-Maid raisins
1 cup buttermilk
1 cup wheat bran
1-1/3 cups all-purpose flour
1/2 cup brown sugar
1/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/4 cup molasses
1/4 cup vegetable oil
1 teaspoon vanilla extract
Instructions:
Preheat oven to 400Ā°F (200Ā°C).
Line your muffin pan with liners. (The ones I use are linked in my Amazon storefront.)
In a small bowl, mix buttermilk and wheat bran, then let soak for 10 minutes.
In a large bowl, whisk together flour, baking powder, baking soda, and salt until combined.
Stir in brown sugar and granulated sugar.
In a separate bowl, whisk together eggs, molasses, oil, and vanilla extract.
Make a well in the center of the dry ingredients and pour in the wet mixture. Slowly mix together with a spatula.
Add in the soaked wheat bran mixture and gently fold until combined.
Fold in the raisins, being careful not to overmix.
Fill muffin liners 3/4 full and optionally top with a few extra raisins for decoration.
Bake for about 21 minutes, or until a toothpick inserted comes out clean.
Let cool for 10 minutes, then serve.
Pro Tip: I love serving these cut in half and buttered!
