Eggnog Crinkle Cookies

Ingredients

2-1/4 cups flour

1/2 cup butter, at room temperature

1 cup sugar +1/4 cup for rolling cookie dough balls in

1 large egg

1/2 cup cream cheese, at room temperature

1/3 cup eggnog

1 teaspoon vanilla extract

1/2 teaspoon salt 1 teaspoon nutmeg

1 teaspoon cinnamon

1/4 teaspoon baking powder

1/4 teaspoon baking soda

2/3 cup powdered sugar (for rolling cookie dough balls in)


Directions:

  1. Blend the butter and sugar in a bowl for 2 minutes. Then, add in the cream cheese and whisk.


  2. Add in the eggs, vanilla extract and eggnog and whisk until everything is combined.


  3. Add in the flour, cinnamon, nutmeg, baking powder, baking soda and salt. Whisk until a dough forms.


  4. Cover the dough in plastic wrap and refrigerate for 30 minutes.


  5. Use a small ice cream scoop to portion the dough, then roll it into balls with your hands. Coat the dough balls in granulated sugar, followed by powdered sugar.

    Tip: If the dough is still sticky, refrigerate for another 30 minutes.


  6. Place the dough balls on baking sheet lined with parchment paper.


  7. Preheat the oven to 350F and bake for 14 minutes. Then, allow the cookies to cool for 5 minutes before transferring them to a cooling rack.
