Cottage Cheese Bread

Serves: 4-6

​Prep time: 2 Hours and 15 minutes

Bake time: 35 Minutes


Ingredients

3-3/4 cups all purpose flour

1 teaspoon salt 4 large egg whites

3 tablespoons milk

3 tablespoons water

1 package of instant dry yeast

1 teaspoon granulated sugar

2 tablespoons extra virgin olive oil

3/4 cup cottage cheese


Directions:

  1. Blend the egg whites and cottage cheese until well combined and smooth.


  2. In a mixing bowl, add the cottage cheese mixture, sugar, flour, salt and yeast. Mix until a dough starts to form, then knead the dough for another 7 minutes


  3. Sprinkle flour on the kitchen counter and place the dough on top. Knead the dough until it forms a ball.


  4. Grease a large bowl with olive oil and place the dough ball inside. Coat the dough in olive oil and cover it with plastic wrap.


  5. Place a tea towel over the plastic wrap and set the bowl in the oven (turned off) for 1 hour and 20 minutes to allow the dough to double in size.


  6. Once the dough has doubled, remove the bowl from the oven and punch down on the center of the dough. Transfer the dough to the counter and spread it out.


  7. Shape the dough into a circle, then roll it inward from one end to the other. Pinch the seams together and tuck in the edges on both sides.


  8. Grease a loaf pan with olive oil. Place the shaped dough inside and cover it with plastic wrap. Allow the bread to rise a second time in the oven for 1 hour, until it doubles in size.


  9. Preheat the oven to 400F and bake for 35 minutes. Allow the bread to cool on a cooling rack for 45 minutes before serving.
