Ingredients:


  • 4 large eggs, separated

  • 1/2 teaspoon white distilled vinegar

  • 2 tablespoons plain Greek yogurt

  • 1/2 teaspoon salt


Instructions:


  1. Preheat oven to 300°F (150°C).


  2. Line 2 baking sheets with parchment paper.


  3. In a large bowl, whisk egg whites and vinegar until firm peaks form, then set aside.


  4. In a separate bowl, whisk egg yolks, salt, and Greek yogurt until pale. (If adding spices, mix them in now.)


  5. Gently fold the egg white mixture into the yolk mixture, being careful not to deflate the batter.


  6. Use an ice cream scoop or 1/4 cup to portion the batter onto the prepared baking sheets.


  7. Shape into small circles using a spoon. (Check the video for a visual guide!)


  8. Bake for 30 minutes, then let cool for 10 minutes before serving.


Serving Ideas:

  • Use as bread for sandwiches with deli meat and cheese.

  • Serve with dips or spreads for a light, fluffy snack!
