10 Minute Bakery Style Almond Croissants!

Serves: 4

​Prep time: 10 minutes

Bake time: 22 minutes



Ingredients

  • 4 large croissants

  • ½ cup ground almonds or almond flour

  • ¼ cup room temperature butter

  • ⅓ cup sugar

  • Zest of 1 lemon

  • Pinch of salt

  • 2 tbsp flour

  • ¼ tsp almond extract

  • 1 large egg

  • ½ tsp vanilla extract

  • Sliced almonds (for topping)


Directions:


Prep the Oven & Baking Sheet


  • Preheat your oven to 350°F (175°C).

  • Line a baking sheet with parchment paper and set aside.


Make the Almond Filling


  1. In a bowl, whisk together the sugar and butter using a whisk or hand mixer until smooth.


  1. Add the egg, vanilla extract, and lemon zest, then beat again for 3 minutes until thick and fluffy.

  2. Add the almond flour and all-purpose flour, then mix for about 30 seconds until the mixture is thick.


Assemble the Croissants


  1. Slice each croissant horizontally (but don’t cut all the way through).

  2. Spread a generous amount of the almond filling inside each croissant.

  3. Close the croissants, then spread more almond filling on top.

  4. Sprinkle with sliced almonds for that classic bakery look.

Bake & Serve

  • Place the croissants on the prepared baking sheet.

  • Bake at 350°F (175°C) for 22 minutes, until golden brown and crispy.

  • Let cool slightly, then serve and enjoy!


Pro Tip: For an extra bakery-style touch, dust with powdered sugar before serving!
