10 Minute Bakery Style Almond Croissants!

Ingredients
4 large croissants
½ cup ground almonds or almond flour
¼ cup room temperature butter
⅓ cup sugar
Zest of 1 lemon
Pinch of salt
2 tbsp flour
¼ tsp almond extract
1 large egg
½ tsp vanilla extract
Sliced almonds (for topping)
Directions:
Prep the Oven & Baking Sheet
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper and set aside.
Make the Almond Filling
In a bowl, whisk together the sugar and butter using a whisk or hand mixer until smooth.
Add the egg, vanilla extract, and lemon zest, then beat again for 3 minutes until thick and fluffy.
Add the almond flour and all-purpose flour, then mix for about 30 seconds until the mixture is thick.
Assemble the Croissants
Slice each croissant horizontally (but don’t cut all the way through).
Spread a generous amount of the almond filling inside each croissant.
Close the croissants, then spread more almond filling on top.
Sprinkle with sliced almonds for that classic bakery look.
Bake & Serve
Place the croissants on the prepared baking sheet.
Bake at 350°F (175°C) for 22 minutes, until golden brown and crispy.
Let cool slightly, then serve and enjoy!
Pro Tip: For an extra bakery-style touch, dust with powdered sugar before serving!
